dyackalXP,
I used this following "search criteria": Point of Sale software Linux in Google, and I got this:

Screenshot-Point of SAle software Linux - Google Search - Mozilla Firefox.png
Google Search Results...

There are 10 Pages of hits shown here....

Screenshot-The World Leader in GNU + Linux Restaurant POS Software - Mozilla Firefox.png
A Commercial POS system for Linux...

This is only the 1st hit on the list. It is a commercial version, and appears to be a "Turn-Key" system with hardware for a "Fod & Beverage Service" business (Restaurant).

I did not look at further hits, but you can explore the findings at your convenience, and decide which, if any, of these offerings are for you. I might note here, that POS software/systems are not new at all, and have been available on various OSs for many years. I doubt you will find any really good POS system/software offered as "free software" (I could certainly be wrong in that statement, it is just my perception of what I have seen over time). This sort of software is complex to write, and has a very large target "market share" in the world of software. Generally, it does not matter to the end user what OS it may be based on, as most of these system are fairly "complete" - meaning they can manage the entire business from sales to inventory, financial reports, and whatever else a business may need. In other words, most are "stand alone" products not requiring any additional accounting, inventory management, or even payroll processing software in most cases (again, exceptions do apply).
There are certainly a wide range of included features provided in various "packages", making for many choices and offering many features needed or wanted by various types of business. Generaly, POS software packages are targeted at specific "business types" - such as Automotive Repair, Food Service, or General Retail Sales, and so on.
Take a look at the findings of a search, and you begin to see that you have many and varied choices... ;)
