Few dumb questions that need answered to get a picture of the painting so to speak.

Ultimate Edition 2.9 ?

What were you doing when you LOST IT ? Details please, be precise please.

LOST as in missing in menu ? Tried using applet in panel to add it to the panel ?

Tried to edit the menu to see if it just got unchecked ?

Still using gnome classic as your UI ?

These things need answered so we know were all this stands.

Ultimate Edition 2.9 installed and fully updated

system monitor still there and fully working.

Thus not update related.

Simple fix is to,

use synaptic

type in gnome-system-monitor

select the completely remove options.

Then fresh install.

Now edit the menu and make sure the box to show in the menu is still checked.

Other then that I will need to wait for Ultimate Edition 2.9 to fully update to help further.

Also note - DO NOT install the 11.04 update.
