Which software will give me an easy way to fax. Simple GUI and setup.

I have never used any of them (don't even have a landline to try them) but you might try some of these:
efax-gtk
gfax
hplip-gui
They can all be found in Synaptic along with a brief description of each.
System > Administration > Synaptic Package Manager
