Change theme/apperance

Im trying to change theme/apperance due too background on rolldown meny is off-white and the text is white (in right click desktop and change background)
Where do i change the overall appereance? only got Adwiata,Ambiance, Radiance , high contrast, and high contrast inverse to choose from.

If you look under application "Ubuntu Tweak" you should see all themes to choose from. There are many more than the defaults, adwaita, ambiance,etc.

I still have the same question as omniman!?..? 
There's no Ubuntu Tweak in Ultimate Edition 3.4.
Applications / System Tools / Preferences / Advanced Settings, in Themes, is the only program that lets me change a theme, but only the WINDOW theme!..
So how can I modify the opacity of the upper and lower parts of the desktop, for example?
